Ingredients:

  • 1 lb dried fettuccine
  • 1 lb Dungeness crab meat
  • 3 T butter
  • 4 oz brandy of choice
  • 1 qt heavy cream
  • 2 minced shallots
  • 1 T Meyer lemon zest
  • 1 bunch chopped parsley
  • 1 cup toasted bread crumbs


Directions:

Sauté shallots until soft, but do not brown.

Deglaze with brandy and cook for 2 minutes.

Add heavy cream and lemon zest, and let reduce by half. Set cream sauce aside.

Cook pasta until al dente.

In a sauté pan, melt butter. Add the crab meat and cook for 1 minute, stirring gently.

Add cream sauce and bring to a simmer.

Add pasta and toss together with parsley.

Plate in 4 bowls and sprinkle bread crumbs over the top.
